The Sausage Kitchen assists Miesfeld’s in producing amazing products by accurately measuring ingredients, grinding, mixing, stuffing, hanging, and smoking our meat products.
Duties/Responsibilities:
· Inspect all raw materials while batching meats.
· Accurately weigh and distribute meats according to batch sheets.
· Operate equipment according to SOP’s and safety standards to create world class product.
· The ability to learn to run a grinder, blender, stuffer, bowl chopper and an injector.
· Ensures that all products are fresh and meet quality standards. Checks for out-of-date products daily and follows appropriate policies and procedures.
· Cleans and sanitizes equipment and food surfaces throughout the department
· Performs other duties as assigned, including assisting in other departments as needed.
Skills/Abilities:
· Excellent verbal and written communication skills.
· Willingness to learn and perform a variety of job tasks.
· Excellent attention to detail.
· Team Player.
· Knowledge of basic math skills.
· Ability to follow GMP.
· Excellent time management skills with a proven ability to meet deadlines.
· Read and follow SOP (Standard Operating Procedures).
· Ability to function well in a high-paced and at times stressful environment.
· Ability to read labels, scales, and thermometer.
· Standing/walking/bending/twisting/etc.
High school diploma or equivalent. Knowledge of Meat Products Preferred
